The Better Burger

From 2000-2003, I ran the Expressly Vegetarian Cafe in Philadelphia. Located on the ground floor of the Seventh-day Adventist church in a place called Chestnut Hill, it served as an outreach to the community. We served sandwiches, salads, soups, and smoothies. Ssssssso simple and good! Better Burgers were the star of the show. They’re homemade from wholesome ingredients, high fiber, vegan, and delicious. One customer came off a long fast with the burger. Another (no joke) moved to the area for the burger. Another came for a burger when her relationship broke up. Clearly they were a hit. Enjoy!
Better Burgers
Saute briefly in a large pot:
1/4 C oil
1 C chopped onions
Add and bring to a boil:
4 C water
1/2 C soy sauce
1 C pecan or walnut meal
1/4 C food yeast flakes
1/2 C walnuts, chopped
t tsp garlic powder
1 T dried basil
2 tsp onion powder
1 t coriander
1/2 t sage (opt.)
1/2 t savory
1 T dried parsley
1/2 C tomato sauce
Turn off the boiling liquid. Stir in:
3 C oats
1/3 C gluten flour
Remove from heat. Form into ice-cream scoop sized patties, bake at 350 for 15 minutes, flip, then bake 15 more minutes.
